Salmon Loaves Recipe – Submitted by a AXFIT Contributor
Hey ALL!
After reading all of Danielle’s great recipes, I’ve decided to share one of my own “clean” recipes that also happens to be quick, easy, and totally versatile!!
I call them salmon “loaves” – like individual meatloaves , but you can turn them into burgers, muffins, or a single large loaf to serve your family!
Ingredients:
1 can of Wild Sockeye Salmon (drained)
1/4 cup of oats
1 egg
1/2 frozen spinach thawed and drained (or 1 cup of fresh spinach steamed, cooled, and chopped)
1/2 red pepper diced
Squeeze of lemon juice
1 TBSP dill (or thyme)
Salt/Pepper to taste
1. Combine all the ingredients in a bowl
2. Freestyle it: Form into 6 individual loaves OR place into greased muffin tin OR form into six burgers, OR make one large loaf
(I like the individual loaves- they make great take along snacks/lunches!)
3. Bake at 375 for about 15-20 minutes (Longer if you’re doing a large loaf) Just make sure to keep an eye on it!
Feel free to add finely diced mushrooms, chili flakes for a kick, or any other herbs/spices that you like to cook with!
